Oven Roasted Potatoes
By Julie Gibson -- One of my family's favorite side dishes

1/4 C. lemon juice
2 1/2 T. olive oil
1 t. thyme
1 t. garlic salt
1/4 t. pepper
2 lbs. potatoes

Mix lemon juice, oil, thyme, garlic salt and pepper in large bowl. Cut potatoes in quarters lengthwise and slice into bite sized chunks, no need to peel. Toss potatoes in lemon juice mixture and spread in a single layer on a cookie sheet. Bake at 450 degrees for about 45 minutes, stirring once about half way through cooking time. Serve with catsup.
