Kelly's whole food veggie-friendly recipes
My favorite recipes focus on eating foods in the natural way they were intended, using whole fruits and veggies. I'm an athlete and runner, so making sure my protein needs are met as a "low-meat eater" is key. I try to keep simple grains like "enriched" white pastas out of my diet. I use instead grains that provide additional health benefits like quinoa, couscous or whole wheat pasta. Just because I don't eat a lot of animal products doesn't mean being a junk food vegetarian would be any better!
